
The process of creating Coco’s Organic Premium Coffee ensures the highest quality, best tasting coffee. A combination of the hands-on involvement of the farmers, the rich resources of the land, and the experience of the Bats’il Maya Cooperative make this coffee a flavor

The Bats’il Maya Cooperative today has 206 farmers from 26 communities. From November to January, these farmers grow the coffee on their fertile lands. From January to April, they harvest the coffee.
The farmers use only first-class cherry beans, which are harvested using 100% organic agroforestry farming methods. Organic agriculture is an ecological production management system that promotes and enhances biodiversity, biological cycles and soil biological activity. Organic food itself is produced by farmers who emphasize the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations.
The beans used in Coco's Organic Premium Coffee are picked in small batches, with each local farm washing the beans, removing pulp and sun drying them locally, with a personal quality check every step of the way.
The coffee is then bagged and brought to the Bats’il Maya production facility, where Jose, the manager of production, oversees the rigorous inspection process. Jose has been with Bats’il Maya for 13 years, and is passionate about the coffee that the cooperative is producing. He personally checks every coffee bag for quality before the coffee passes through the hulling and selection process.
This process ensures that all beans are the proper size, weight and quality for the program. The beans are then roasted to each client’s specifications. In the case of Coco’s, several months were spent roasting and sampling to get just the right balance between aroma, body and taste. It is this attention to detail that truly sets apart Coco’s Organic Premium Coffee from its mass-produced counterparts.
Our Coco’s Organic Premium Coffee is USDA Organic Certified. Before a product can be labeled “organic”, a government-approved certifier inspects the farm where the food is grown to make sure the farmer is following all of the rules necessary to meet USDA organic standards.
